Chicken and Sausage Gumbo

Chicken and Sausage Gumbo- Printable Version

Ingredients:

1 onion (diced)
2 cloves garlic (minced)
4 celery stalks (diced)
1 tbsp. olive oil
1 pound chicken breasts
3-6 cups water
4 andouille sausage links
2-3 cups okra (chopped)
1 box Zatarain’s Gumbo Base
1 bay leaf
Serve with rice

Directions:

  1. Saute onion, garlic, and celery in the olive oil.
  2. Add sauteed mixture to a crock pot with chicken and water. (Add enough water to almost completely cover the chicken.
  3. Add sausage, okra, and bay leaf.
  4. Cook on low for 6-8 hours.
  5. Add gumbo base about an hour or two before serving. Mix the base with 1-2 cups water. Whisk well and add to the crock pot.
  6. Serve over rice.

Notes:

Chris’ family is from New Orleans and they take their gumbo very seriously. This delicious recipe was shared with me by his mother.
