Beef Stew- Printable Version


leftover meat from Pot Roast
1 tbsp. olive oil
2 cloves garlic (minced)
4 carrots (chopped)
1/2 an onion (diced)
2 cups potatoes (chopped)
4 celery stalks (chopped)
1 can diced tomatoes
1 can chicken broth
1-2 cups water
1/2 cup okra (chopped) – optional
1 bay leaf
1 tsp. rosemary
1 tsp. basil
1 tsp. thyme
salt and pepper


  1. Saute the garlic, onion, carrot, and celery in olive oil in a Dutch oven or large pot.
  2. Add tomatoes, potatoes, broth, water, okra, bay leaf, rosemary, basil, thyme, and leftover meat. Mix well and let simmer for 30 to 45 minutes.
  3. Add salt and pepper for flavor.
  4. Serve hot with warm bread and top with grated cheddar cheese.


Pot Roast is one of my favorite meals. However, we always have TONS of leftovers when I make it. This recipe is a perfect use for the leftover meat.

You can easily leave out the tomatoes and okra for a more traditional beef stew.
