1 can black eyed peas
2 small green bell peppers (diced)
1/2 purple onion (diced)
1 can Rotel or diced tomatoes
salt and pepper
juice from 1 lime
1 tbsp. Italian dressing
- Add all the ingredients together in a large bowl. Mix well.
- Serve with chips.
I was first introduced to this “salsa” by a family I adore! They shared the recipe with me… and I lost it. 😦 So, this is my re-creation of the wonderful dish they shared with me.
As always, give and take is part of any great recipe. Add what you like and take out the things you don’t. I bet some corn would be amazing in this! Maybe I will try that next time.
This is great with normal tortilla chips, but also delicious with FRITOS!! Because who doesn’t love Fritos??
