1 cup quinoa
1-2 bell peppers (green, yellow, orange, red)
1 cup black beans (drained)
3/4 cup corn
1/4 cup red onion (chopped)
2 tbsp. fresh cilantro (chopped)
1/2 tsp. cumin
1/2 tsp. chili powder
shredded cheese (cheddar and Monterey jack)
salt and pepper
- Cook quinoa according to package instructions.
- Mix together quinoa, diced peppers, black beans, corn, onion, cilantro, cumin, chile powder, and salt/pepper.
- Place on tortilla wraps and top with cheese.
Great toppings: cheese, avocado, sour cream, queso, salsa
Need some meat? Cook some ground beef and add to the quinoa mixture.
This recipe can also be used for stuffed peppers!! Simply make the mixture and stuff some seeded bell peppers. Top with cheese and bake in a 350 degree oven for about 20 minutes.
